No-bake lemon bars are a simple option for families who want something sweet, refreshing, and easy to prepare without turning on the oven. They are cool, creamy, bright in flavour, and work well for spring gatherings, weekend dinners, or a make-ahead treat kept in the fridge.
What makes this dessert especially practical is how little active kitchen time it takes. The crust comes together quickly, the filling is simple to whisk and fold, and the refrigerator does the rest of the work. Ingredients
1 1/2 cups shortbread crumbs
1/4 cup unsalted butter, melted
2 tablespoons white sugar
1/2 teaspoon salt, divided
1 can (14 ounces) sweetened condensed milk
2 tablespoons lemon zest, plus more for garnish if desired
1/2 cup lemon juice
1 1/2 cups heavy cream
or1 carton (8 ounces) whipped dessert topping, thawed
Method
Line an 8x8-inch baking pan with parchment paper, leaving some overhang on the sides for easy lifting later.
In a bowl, mix the shortbread crumbs, melted butter, sugar, and 1/4 teaspoon salt until evenly moistened.
Press the crumb mixture firmly into the bottom of the prepared pan to form the crust.
In a separate large bowl, whisk together the sweetened condensed milk, lemon zest, lemon juice, and remaining 1/4 teaspoon salt until smooth.
If using heavy cream, beat it in a separate bowl until stiff peaks form, then gently fold it into the lemon mixture.
If using whipped topping, fold it directly into the lemon mixture until fully combined.
Spread the filling evenly over the crust.
Cover and refrigerate for at least 4 hours, or until firm.
Lift the chilled dessert out using the parchment overhang.
Cut into bars and garnish with extra lemon zest if desired.

For a sweeter finish, lightly sweeten the whipped cream before folding it into the filling.
For a different crust, graham cracker crumbs can work as a variation.
